On reaching optimum ripeness, the Chardonnay and Gewürztraminer grapes are harvested separately. Once in the bodega, the grapes are lightly crushed and gently pressed. The musts are left to clarify by gravity for 48 hours to eliminate the gross lees and the remains of the seeds in order to avoid herbaceous aromas.
Alcoholic fermentation is carried out in stainless-steel vats at temperatures of 14-17ºC during approximately 2 weeks. Once complete, both varieties are blended then aged on lees for 4 months in stainless steel vats at 12ºC. One month before bottling, we stop stirring the lees to allow the wine to clarify by gravity before bottling.
The combination of Chardonnay and Gewürztraminer make 12 Lunas Blanco a very elegant wine. Lemon-yellow in colour, with intense aromas of peach in syrup, and pineapple. In the mouth, silky, unctuous, fresh, powerful fragrance, and good body.
